How do I use terrain textures like those? Can I map more than just 4 to GG? Will I have to replace the defaults with new ones? Or can I set them as entities and place them that way?

Just unzip it and drop the whole folder into your terrainbank folder, then you can select it from the drop down menu in tab tab in the test game.

You can only use 4 terrain textures per level. I really wish they'd increase that.
