I understand that I can opt in to a beta version of GG is this so? if so how can I do it? Through steam? or can I just download it?

Usually this is done in the Steam library.

Right click on the game guru icon and choose properties.
Choose the beta tab and see what is available.
The Christmas build should be there and that should be the latest version out for Beta.

Keep an eye out there.

I recently asked about that Christmas Beta and Lee informed me that an official version 1.112 was released by Ravey in first week of January, which seems to have gone unnoticed by everyone.

The Christmas Beta was released to everyone as a kind of gift and a one off, you will need to be on the Beta test list to receive future ones.
