Am I missing something or is there not a terrain undo function? anytime I make a mistake I have to go through a unneeded process to smooth it back out or whatever to get the result I had before

There is a one time undo and redo feature. Ctrl Z should work, and there is a choice in the edit menu.

The simple test is to select terrain edit mode, one long left click to raise a hill, then hold CTRL and press Z once. You will notice the hill reverts to a flat floor again.
