So overall thoughts:
I like the food/water/hunger indicators and the precept of survival on a foreign planet. It's an under-utilized genre that really could have a good home with Game-Guru. I've thought a lot about doing it myself too.
The minimap is pretty cool too. I really need to take the time to figure out how to add that on my own projects!
Specific thoughts:
I like the skybox you are using, is that custom? Looks good.
Your environmental touches are nice - the crystals and plants look real good together.
Use of stock objects is acceptable but you'll want to modify them slightly in a paint program first to give them a more distinctive touch. Check out some of wolf's work for an example. I personally like to use this method:

General recommendations:
Unify your palette better. You have a really broad range of very harshly different colors that are kind of rough on the eyes.
The browns and reds and blues and greens are just a bit overwhelming. Try to pick one main color for the hud with a few hues and then one single different color. Example:
The purpose of a HUD is to *NOT* distract from the environment but rather to act as a non-obtrusive overlay which can be quickly parsed out by the human mind/eye. I'd also consider adding an alpha channel to the hunger indicators and reducing their overall width so they don't eat as much of the screen up.
Add some rock fields on your final pass to break up the terrain, if you get a chance. It's fairly barren right now though I realize you're still in the development phase of your map(s).
It looks good though, really. Has real promise and I would like to see it as a completed project.
